Roast Cod with Olives and Lemon

- 2lbs fresh COD FILLETS
- ¾ cup DRY WHITE WINE
- ½ cup MIXED OLIVES
- LEMON ZEST from one lemon
- 1 tablespoon fresh LEMON JUICE
- SALT and PEPPER to taste (no more than ½ teaspoon of each)
- 1 tablespoon OLIVE OIL
- fresh PARSLEY, chopped
Preheat oven to 400º.
Place cod fillets in a roasting pan. Pour in wine and lemon juice. Scatter olives around the fillets. Sprinkle with lemon zest, salt and pepper and drizzle with olive oil.
Roast until cod flakes apart easily with a fork, about 20 minutes. Remove from oven and divide cod evenly between four plates. Spoon sauce and olives over each and serve.
