Harvesting & Storing French Tarragon

Harvesting:

Harvest the leaves in early to midsummer when they contain the most essential oil. Use the leaves fresh or freeze them (see below) for later use.

Preserving:

Tarragon leaves can be frozen in airtight bags.

Steeping tarragon leaves in vinegar is another way to preserve it .

Dried tarragon loses its potency, so you may have to use more than what is called for in recipes.
