Rumex, or sorrel, is a leafy green perennial with long roots. Plant in light shade or full sun in moist soil. Harvest the tender young leaves from the sides of the plant in the spring and fall. This will not only supply you with delicious leaves for cooking and salads, but will help the plant to bush out as well. Young leaves are best, as older leaves can be tough and bitter. When seed stalks appear in mid-summer, cut them back. Once the plant is established, after 2-3 years, cut the entire plant back to stimulate new growth.
Sorrel is an excellent addition to a salad, or boil the leaves like spinach for a healthy side dish topped with butter and salt.
